Ingredients For the Dipping Sauce (Tsuyu):

  • 1/2 cup mirin

  • 1 tablespoon sugar

Ingredients For The Toppings and Noodles:

  • 4 servings of medium-thick ramen noodles
  • 2 sheets nori (seaweed), cut into thin strips
  • 2 green onions, finely chopped
  • Grated daikon (radish) or wasabi (optional)
  • Sesame seeds (optional)
  • Grated ginger (optional)

Instructions:

Prepare the dressing:

  1. In a small saucepan, combine soy sauce, mirin, dashi, and sugar.
  2. Bring to a boil over medium heat, then reduce heat and simmer for 5 minutes.
  3. Remove from heat and let the sauce cool to room temperature, then chill in the refrigerator.

Prepare the Noodles:

  1. Bring a large pot of water to a boil.
  2. Cook the ramen noodles according to package instructions until al dente.
  3. Drain the noodles and rinse thoroughly under cold running water to cool them completely. Drain well and set aside.

Prepare the Toppings:

  1. Divide the chilled noodles into four servings, placing them on bamboo trays or plates.
